The Toroku Sakai Kirameki VG10 Tsuchime & Damascus Gyuto 210mm is a refined Japanese chef knife that blends traditional Sakai craftsmanship with elegant modern performance. Designed for chefs and enthusiasts who appreciate both cutting precision and visual artistry, this gyuto showcases a striking combination of layered Damascus steel and hand-finished Tsuchime hammering.
Named “Kirameki (煌めき)”, meaning sparkle or brilliance, the series reflects the shimmering character of the Damascus pattern as it catches light across the blade surface. The hammered Tsuchime finish not only enhances the knife’s handcrafted aesthetic, but also helps reduce food sticking during preparation.
At the core of the blade is premium VG10 stainless steel, widely respected for its excellent edge retention, sharpness, corrosion resistance, and ease of maintenance. The 210mm Gyuto profile offers exceptional versatility for everyday kitchen tasks, making it ideal for slicing meat, chopping vegetables, and performing detailed prep work with smooth control and precision. The blade is built around an VG10 stainless steel core, layered in 67-layer Damascus, and finished with hand-applied tsuchime hammer marks that help reduce food drag.
